Quinoa Salad with Mediterranean flavours
This is one of the recipes eaten by a large group of people. Everyone knows quinoa is a superfood that helps in weight loss. By combining a full table of vegetables and nuts, it can be transformed into a luxury and healthy dish for lunch.
The recipe:
- Cooking with Quinoa and roasting the tomatoes are the initial stages in making this quinoa salad dish. Both can be prepared up to 3 days ahead of time of your lunch. Until you are ready to create the salad, keep them in the refrigerator in an airtight container. You don’t have to buy canned Chickpeas, just get the whole lentils and boil them before prepping.
- Next, prepare the dressing. In a dish or container, whisk together a basic mixture of extra-virgin olive oil, white wine vinegar, lemon juice, Honey, mustard, and herbs.

And when I am talking about staples, you are not supposed to get the canned beans or ready-to-eat ones from the stores. Get the whole foods. It is very necessary to avoid processed food if you are trying to eat healthy.
The recipe:
- Making the dressing is the first step in this recipe. For the dressing, you need fresh cilantro, lime juice, olive oil, garlic, and salt. At the very bottom of the bowl, mix everything together. Yes, you can make this black bean and corn salad in only one bowl.
- Next, add the bell peppers, jalapeño, cilantro, red onions, black beans, and corn to the salad. At the avocado, cotija, and seasoning to taste after tossing to coat
- Lastly, add some coriander leaves and the toasted pepitas to the salad as garnish. Now that you’re ready, have fun.

- Add the fresh herbs after that. Make sure the salad ingredients are well blended by tossing again.
- Lastly, serve after seasoning to taste. If you want, you can also toss some fresh mint into the salad before serving. This really enhances the flavour if you are serving at a get-together.

A poorly cooked raw kale salad can be bitter and tough; you wouldn’t want that. The first tip for making a tasty kale salad is to wash and massage the kale until the leaves are delicate and pliable. Here’s how to accomplish it:
The recipe:
- Wash the kale leaves thoroughly after removing them from the stems. You may either quickly dry them in a salad spinner or spread them out on kitchen towels.
- Cut the kale leaves into small pieces by tearing them.
- Put them in a big bowl with several pinches of salt, half a teaspoon of olive oil, and fresh lemon juice.
